FROZEN POPSICLES - Inspired by disney movie - Princess Elsa Ana - Easy Recipe - Ice lolly pop

We are so excited to make our first popsicle celebrating the movie Frozen. Being Scandinavian we wanted to celebrate the movie Frozen as it has many Scandinavian references such as Hans Christian Andersen, Norway.  Also we enjoyed all of the characters in the movie including Princess Elsa and Princess Anna, Prince Hans, iceman Kristoff, reindeer Sven, daydreaming snowman Olaf and of course the kingdom Arendelle.

This is a super easy and fast DIY tutorial on how to make your very own Frozen Popsicle.  Here we show you how to make two different ways of Frozen Popsicles.
  
Ingredients:
  • Rock Candy on a Stick (clear, light blue and dark blue)
  • blue food coloring
  • blueberry sparkling water
  • (optional) nonflavored sparkling water
  • Elderflower Syrup or Lingonberry Syrup (optional)
Kitchen Utensils:
  • Popsicle molds
  • measuring cup
  • wooden spoon 
  • large bowl or towel
Here we make two easy ways to make these Frozen Popsicles

First Easy Frozen Popsicle Recipe:
  1. Measure the amount of sparkling water you need in the molds.  Next pour the sparkling water into a measuring cup.
  2. Add 1 drop of blue food coloring and mix the water. Add more if you like it a little darker. 
  3. Pour the blue clear soda into the popsicle molds. Leave about a 1/4 of an inch space for expansion.
  4. Place a clear rock candy on a stick into each mold.
  5. Put the popsicle molds into the freezer
  6. Wait for at least 4 to 6 hours to make sure popicles are completely frozen or at least until it is not sloshing around inside.
  7. To un-mold the popsicles, fill a bowl with warm water, and submerge the mold in the water for about 15-30 seconds. If the popsicles don't slide out, submerge it for a few seconds longer.   Another option is to soak a towel with warm water and wrap the popsicle molds with the warm towel until it loosens up.
  8. Enjoy the popsicle
 
Second Easy Frozen Popsicle Recipe:
  1. Pour clear soda into the popsicle molds. Leave about a 1/4 of an inch space for expansion.
  2. Place either a light blue or dark blue rock candy on a stick into each mold.
  3. Put the popsicle molds into the freezer
  4. Wait for at least 4 to 6 hours to make sure popsicles are completely frozen or at least until it is not sloshing around inside.
  5. To un-mold the popsicles, fill a bowl with warm water, and submerge the mold in the water for about 15-30 seconds. If the popsicles don't slide out, submerge it for a few seconds longer.   Another option is to soak a towel with warm water and wrap the popsicle molds with the warm towel until it loosens up.
  6. Enjoy the popsicle
These are popsicles are perfect on a hot day, birthday parties or sleep overs. Make sure you have enough time to make these.  We usually make these the night before and let these freeze over night.

How to make Mayonnaise - A Homemade Mayonnaise Recipe - Delicious for Nordic Cuisine




Ingredients:

  • 1 large egg yolk*
  • Juice of 1/2 fresh lemon
  • Optional 1 teaspoon white wine vinegar
  • 1 teaspoon grainy mustard (or other mustard)
  • 1/4 -1/2 teaspoon salt
  • Pepper to taste
  • 1/2 cup olive oil 
  • 1/2 cup vegetable oil




  1. Combine egg yolk, 1/2 cup oil vegetable oil and olive oil gradually into a medium bowl. Whisk the mixture.
  2. Add lemon juice, vinegar, mustard, and 1/4 teaspoon salt into the medium bowl. Whisk until blended and bright yellow, about 30 seconds.
  3. Whisking constantly (by hand or using an electric mixer)
  4. If need be, add additional vegetable oil to yolk mixture, a few drops at a time and gradually. Whisk constantly, until mayonnaise is thick, or for about 8 minutes (mayonnaise will be lighter in color). 
  5. Cover and chill.  Can be kept for up to 2 weeks in the refrigerator. 

Raw egg is not recommended. To avoid the risk of salmonella infection we recommend that you use a pasteurized egg yolk or organic free-range egg yolk.

Danish Open-faced Potato Seafood Sandwich ❤️ Smørrebrød med Kartoffel, Rejer, Laks og Rogn


This delicious open sandwich is great for either lunch or dinner.

Ingredients:
  • 1 slice of rye bread
  • butter
  • 1 large boiled potato sliced
  • 1 slice smoked salmon
  • 7-10 shrimp (according to size)
  • cod roe
  • mayonnaise mixed with chopped chives
  • dill
  • lemon, optional
Instructions:
  1. First butter the rye bread.
  2. Place the sliced potatoes in 2 rows on the buttered rye bread.
  3. Add a slice of rolled up smoked salmon on one side
  4. Place the shrimp on other side.
  5. Add the mayonnaise in the middle
  6. Add cod roe on top of mayonnaise
  7. For both decoration and taste add dill on top of the sandwich
It's that easy! If you like a little salt and pepper, add to taste. If need you desire to serve this as an appetizer, slice the bread into smaller pieces. This sandwich goes great with a Danish beer too
We usually set the table with a Royal Copenhagen plate, a fork, a knife and a glass for the beer. When we have a Danish celebration, we traditionally have Danish beer and schnapps with an open-faced sandwich and say Skål frequently!

Easy Peach Walnut Cake Recipe



This summer enjoy sweet, juicy peaches with a moist cake.  That is what we do each summer.  We enjoy picking our peaches and making this delicious peach cake. When we run our of fresh peaches, we head on over to a farmer's market or grocery store to buy peaches for this cake too.




Ingredients:

  • 3 eggs, beaten
  • 1 3/4 cups brown sugar
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 2 cups fresh peaches - peeled, pitted and sliced
  • 1/2 cup chopped walnuts 
Kitchen Utensils
  • measuring cup
  • measuring spoon
  • large mixing bowl
  • spatula
  • whisk
  • wooden spoon
  • 9x12 inch pan
Directions:

  1. Preheat oven to 375 degrees F (or 190 degrees C). Grease and flour a 9x12 inch pan.   
  2. In a large bowl, combine the eggs, sugar, oil, flour, salt, cinnamon, baking soda, peaches and walnuts. 
  3. Mix thoroughly.
  4. Pour into prepared 9x12 inch pan and bake at 375 degrees F (or 190 degrees C) for 50-55 minutes or until done.
  5. Optional: Add extra slices of peaches and walnuts on top of cake
  6. Pour into greased and floured 9x12 inch pan and bake at 375 degrees F (or 190 degrees C) for 50-55 minutes or until 
    done.   
  7. Let the cake cool down before slicing.


  8. Serve the cake plain or with whipped cream.
