Ingredients:
- 4 salmon fillets
- 1-2 tbsp honey
- 2 tbsp mustard
- 2 tbsp oil
- juice and lemon zest of 1/2 lemon
- salt and ground pepper
- 1 onion sliced and chopped
- chopped parsley, chives, rosemary, thyme
- baked potato served with butter
- peas or other vegetable on the side
- oven proof dish
- cutting board
- knife
- 1 small bowl
- Thoroughly rinse the salmon in cold water and pat dry.
- Mix honey, mustard, oil, lemon zest and juice, salt and pepper in a small bowl.
- Place the salmon fillets and the chopped onions in an ovenproof dish. Pour the marinade over the fish and leave it for 30 min.
- Heat the oven to 400F and roast the fish and onions for approx. 12-15 min (or till fish is flaky). To test the salmon poke a fork at the thickest part of the salmon and the fish should flake. If not, steam the fish for 1 or 2 more minutes.
- Transfer the salmon to a plate. Serve with the baked potato on the side with butter and chopped herbs and another vegetable on the side.
