Gravad Laks - Gravad Lax - A delicious Nordic Dill-cured Salmon Dish Recipe



Gravlax is a family favorite.  So surprisingly easy to make.  We are sure you will enjoy both making and eating it.  Perfect dish to make during the holidays!



Gravlax is a Nordic dish consisting of raw salmoncured in saltsugar, and dill.



Ingredients

  • 1 pounds fresh salmon, center cut
  • 1 large bunch of dill, plus 1/4 cup chopped dill for serving
  • 1/2 cup salt
  • 1/2 cup sugar
  • 2 tablespoons pepper
  • Optional: 1 tablespoon whole fennel seeds 
  • Pumpernickel bread, sourdough bread, or crisp bread  (knaekbroed) for serving
Mustard/Dill Sauce Ingredients

Capers, chopped onion, horseradish,lemon slices


Trivia: Did you know that during the Middle Ages, gravlax was made by fishermen, who salted the salmon and lightly fermented it by burying it in the sand above the high-tide line?


Directions

  1. Cut the salmon in half crosswise and place half the fish skin side down in a deep dish.
  2. Wash and shake dry the dill shop it and place it on the fish.
  3. Combine the salt, sugar, crushed peppercorns in a small bowl and sprinkle it evenly over the piece of fish.
  4. Place the other half of salmon over the dill, skin side up.
  5. Cover the dish with aluminum foil or plastic wrap. Place something  heavy on top. Refrigerate the salmon for 2 and up to 3 days, turning it every day and basting it with the liquid that collects as well as the salt/sugar/pepper.
  6. Lay each piece of salmon flat on a cutting board, whip off the salt/sugar/pepper and dill, and sprinkle the top of the salmon with chopped fresh dill. 
  7. With a long thin slicing knife, slice the salmon in long thin slices as you would for smoked salmon.
  8. Serve with dark pumpernickel bread, crisp bread or sourdough bread and mustard sauce. You can also serve with chopped onion, horseradish and capers, if desired.

Danish Apple Cake - Herregårdsæblekage

Do you love apple desserts?  This is a delicious Danish apple cake recipe! Our family and friends loves this cake recipe.  We hope you will enjoy it too!






Ingredients:
  • 13 tbsp butter
  • 2 cups flour
  • pinch of salt
  • 4 oz sugar
  • 1 egg
  • 2 tblsp cream

Filling
  • 2 lb apples (approx. 5 large)
  • 1/3 cup sugar
  • 1/3 cup raisins
  • 1/2 cups almonds, chopped
 Topping (Remonce)
  • 6 tbsp butter
  • 1/2 cup sugar
  • 1/2 cup chopped almonds
Garnish (optional)
  • 2 cups whipped cream
Directions:

  1. Combine the butter with the flour, add salt, sugar, egg and cream.
  2. Let the dough rest in fridge for 1 hour or more before the dough is rolled out in 1/4" thickness.
  3. Cut the dough into two round cakes- the size of the springform.
  4. The one cake is for the bottom, and the other for the lid, the rest of the dough is for the sides of the springform.
  5. Peel the apples and cut into thin slices.
  6. Layer into the cake-pan and sprinkle with sugar, raisins and chopped almonds.
  7. Add the"lid" and press the edges well together.
  8. Combine the topping, and stir until white.
  9. Spread the topping over the"lid" and puncture the dough with a fork.
  10. Bake in a 375F degree oven for approx. 1 hour.
  11. Serve lukewarm with cold whip cream.

Brune kager - Brown Cookies - Christmas cookies



Do you celebrate Advents each Sunday in December?  These cookies are our family favorite to have during Advents. 

Ingredients:

  • 1 cup molasses
  • 1 cup brown sugar
  • 1 cup butter or 16 tblsp   
  • 3 1/2 cups sifted flour 
  • 1/2 teaspoon baking soda
  • 1/2 tsp baking powder
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1/2 teaspoon clove
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon salt




Directions:

  1. Combine molasses, brown sugar and butter in a pot.
  2. Heat and cook 4 minutes then cool to lukewarm.
  3. Mix the flour with the rest of the ingredients and stir 1 cup of it into the pot.
  4. Stir in remaining flour.
  5. Roll out on a lightly floured surface approx. 1/8 inch thick or thinner.
  6. Cut out with cookie cutters.
  7. Place on a lightly greased baking sheet. Optional place an almond in the center of each cookie.
  8. Bake at 375 F for about 5 minutes.
  9. Watch closely so they don't burn
