Kogt revet hvidkål og gulerødder - Sauteed shredded cabbage and carrots side dish recipe

What to eat with this side dish? This Sauteed shredded cabbage and carrots side dish can be served either at dinner or lunch with a meat dishes.  Danish hot meals such as frikadeller (Danish meat balls) or ham are great. This is a great dish to prepare in advance. If you make enough, it is great as a left over food to reheat the next day. 




Ingredients:

  • 2 cups coarsely chopped white cabbage, cored and finely shredded
  • 2 cups shredded carrots, peeled an shredded
  • Salt and ground pepper to taste
  • 2 tablespoons chopped flat-leaf parsley
Directions:
  1. First prepare the vegetables.
  2. Heat butter in a frying pan on medium-high heat. 
  3. Add the sliced cabbage and shredded carrots and stir it for 1-2 minutes. 
  4. Lower the heat and cover with a lid, cook for 2-4 minutes. 
  5. Remove cover and season with salt and pepper to taste and sprinkle with chopped parsley.
  6. Serve warm.

Smørrebrød Fiskfilet med remoulade - Fillets of Perch or Plaice (Flounder) Sandwich

Smørrebrød is an open-faced sandwich and starts with the base of buttered bread (usually ryebread) and is topped off, in an artful way, with varying ingredients which compliment each other.

Ingredients:

For the Flounder Filet: 
  • 1 Perch or Flounder Filet  
  • 1 egg, lightly beaten 
  • plain bread crumbs 
  • salt and pepper 
  • extra virgin olive oil, for frying  

For the Smørrebrød:
  • 1 piece of fried fillet (warm or cold)
  • 1/2 cup of Danish remoulade
  • two slices of lemon
  • 1 slice of buttered rye bread
  • 4 pieces of shrimp
  • pieces of dill
  • 2 baby tomatoes or capers
  • salt and pepper to taste
Instructions:
  • First turn the fillet in a whipped egg, dip it in breadcrumbs and fry it in butter on the frying pan. 
  • Place the warm (or cold) fillet on a piece of buttered rye bread.
  • Add remoulade in the center of the fillet.
  • Place the shrimp on one side of the remoulade .
  • Add two twisted lemon slices across and over the remoulade .
  • Add baby tomatoes or capers on the fillet and next to the remoulade.
  • For both decoration and taste add several pieces of dill in between the slices of twisted lemon
It's that easy! If you like a little salt and pepper, add to taste. It is a great sandwich for either lunch or dinner.  If need you desire to serve this as an appetizer, slice the bread into smaller pieces. This sandwich goes great with a Danish beer too.  

We usually set the table with a Royal Copenhagen plate, a fork, a knife and a glass for the beer. When we have a Danish celebration, we traditionally have Danish beer and schnapps with an open-faced sandwich and say Skål frequently!

Norwegian Egg Coffee - Norske Egg Kaffe

Norwegian egg coffee is popular among Americans of Scandinavian origin in the Midwest, and apparently it was something immigrants brought with them from Norway. 

The egg helps the coffee grounds to flocculate, and it allows the coffee grounds to sink faster to the bottom of the pot. You will get a clearer coffee with a pleasant and mild taste. The coffee will not be bitter, and the coffee still have enough “body” so it doesn’t feel too thin! 



Ingredients:
  • 3 tblsp. coarsely ground coffee
  • 1 egg
  • 1/4 cup cold water
  • 3 cups boiling water
  • 1 cup cold water
Instruction:
  1. Mix the coffee with 1/4 cold water and one egg to a thick paste.  
  2. Add the thick paste mixture to the boiling water, stir carefully and leave it to boil for 3 min. Remove the pot from stove
  3. Add the remaining cold water. 
  4. Let the coffee grounds settle for about 10 minutes, skim off any floating particles and 
  5. Filter the coffee through a fine meshed sieve and serve. 
The egg coffee has a pleasant taste even when it is cold, and it also makes a very nice iced coffee!

Nutella Banana Nut Muffin Recipe - Give it a Nutella Swirl!

We have had a lot of rain lately.  The weather makes me want to do some fall baking.  Here is a simple, quick, and delicious Nutella Banana Nut Muffin recipe.  You can serve these muffins any time of the day warm or cold. Great for to have either for breakfast or as a snack.

Ingredients:

Flour Mixture:
  • 1/2 cup whole-wheat flour
  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoon baking powder 
  • 1 teaspoon baking soda
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon of ground nutmeg (optional)
  • 2/3 cup coarsely chopped walnuts
Wet Ingredients:
  • 1 large egg
  • 1 cup of plain yogurt
  • 1 1/3 cup mashed ripe bananas (about 2 bananas)
  • 3/4 cup brown sugar
  • 6 tablespoons of vegetable oil
  • 1 teaspoons vanilla extract
  • Nutella
Kitchen Utensils:
  • 1 large bowl, 1 medium bowls and 2 small bowl
  • measuring cup
  • measuring spoons
  • whisk
  • spatula 
  • ice cream scoop
  • knife
  • fork
  • cutting board 
  • 6-cup Jumbo muffin pan 
  • toothpick 


Directions: 
  1. Preheat oven to 425°F and position a rack in the center of the oven.
  2. Grease or line a jumbo size muffin pan.
  3. In a medium bowl add the flour mixture:all-purpose flour, wheat flour, baking soda, baking powder, cinnamon, nutmeg and salt.  Set aside. 
  4. Now take 2-3 tablespoons of your flour mixture and put it in a small bowl of chopped walnuts.  Give a quick little mix to coat so the flour adheres to the walnuts.  That way when the muffins are baking, the walnuts will not sink all of the way down. 
  5. In a small bow, mash the bananas.
  6. Next in large bowl, whisk the smashed bananas, yogurt, brown sugar, egg, vegetable oil and vanilla extract.
  7. Slowly mix the flour mixture into the wet ingredients with a few light strokes and until the dry ingredients are moistened.  The batter should not be smooth so don't over mix. 
  8. Fold in walnuts.
  9. Fill muffin tins 1/2 full using an ice cream scoop.
  10. Add 1 teaspoon of Nutella in each muffin cup.
  11. Add another spoonful of batter in each muffin cup.
  12. Top each muffin with about 1 teaspoon of Nutella.
  13. Bake the muffins at 425°F first 5 minutes.  Then reduce the temperature to 375°F and bake the muffins for another 25 minutes until tops are lightly golden. 
  14. The easiest way to tell if the muffins are baked is to insert a toothpick into the center.  If the toothpick comes out clean then you know they are done.
  15. Transfer to a wire rack and let the muffins cool in the pan for10 minutes.
  16. These muffins are best when freshly baked, but they’re still good the second day.

How to Make a Marinated Salmon A delicious and easy to make Salmon Dinner

Quick, easy and perfect. This salmon dinner recipe is one of our favorites.  If you are short on time this is a perfect dinner to make.  You can marinate the salmon to give a rich flavor earlier in the day.  Then when you are ready to make the dinner pop the salmon in the oven and whip up the sides.  A delicious salmon dinner to make year round. 




Ingredients:
  • 4 salmon fillets
  • 1-2 tbsp honey
  • 2 tbsp mustard
  • 2 tbsp oil
  • juice and lemon zest of 1/2 lemon
  • salt and ground pepper
  • 1 onion sliced and chopped
  • chopped parsley, chives, rosemary, thyme
  • baked potato served with butter
  • peas or other vegetable on the side
 Kitchen Utensils:
  • oven proof dish
  • cutting board
  • knife
  • 1 small bowl
Instruction:


  1. Thoroughly rinse the salmon in cold water and pat dry.
  2. Mix honey, mustard, oil, lemon zest and juice, salt and pepper in a small bowl.
  3. Place the salmon fillets and the chopped onions in an ovenproof dish. Pour the marinade over the fish and leave it for 30 min.
  4. Heat the oven to 400F and roast the fish and onions for approx. 12-15 min (or till fish is flaky). To test the salmon poke a fork at the thickest part of the salmon and the fish should flake. If not, steam the fish for 1 or 2 more minutes.
  5. Transfer the salmon to a plate. Serve with the baked potato on the side with butter and chopped herbs and another vegetable on the side.
