Jødekager opskrift - A Classic Danish Holiday Cookie Recipe



These cookies Jødekager are very common in Danish bakeries and homes.  As a child our family always served these cookies at big family parties.  These are an old fashion cookie with great flavor.  It is almost impossible to just eat one cookie.  Below is the cookie recipe with a yummy cookie topping.  First step is make the cookie.

 


Cookie Ingredients:

  • 4 cups flour
  • 15 tblsp cold butter
  • 1 1/2 sugar
  • 2 egg yolks
  • lemon zest of 1/2 a lemon
  • 1/2 tsp of ground ginger

Cookie Topping:

  • 1 whipped egg
  • 1/3 cup of white sugar 
  • two teaspoons of ground cinnamon
  • chopped almonds
Kitchen Utensils:
  • bowl wooden spoon 
  • grater 
  • glass
  • pastry blender
  • measuring cup and spoons
  • rolling pin
  • baking sheet
  • parchment paper (optional)
  • whisk 
  • wooden spoon
  • food processor (optional)

Cookie Instruction:

  1. Grind lemon peel on a grater to get the lemon zest.
  2. Mix flour, sugar, lemon zest and ginger and crumble the mixture with the cold butter, so it has the consistency of grated Parmesan.  You can use either a pastry blender or your hands. (you may use a food processor too).
  3. Mix the egg yolks into dough mixture with a wooden spoon.  Then use your hands to continue combining the ingredients.
  4. Scrape the sides of the bowl as needed.
  5. Knead into a homogeneous dough without too much kneading.
  6. Shape the dough into a roll.
  7. Wrap the dough in plastic wrap and place it in the refrigerator for 2 hours or leave it in the freezer for approx. 1 hour.
  8. Roll dough out and cut out cookies with a glass or roll the dough into a sausage and slice it with a knife. 
  9. Place the cookies on a buttered and floured baking sheet.
  10. Beat an egg to make an egg wash. 
  11. Brush the cookies with the egg wash.
  12. In a small bowl mix sugar and cinnamon.
  13. Sprinkle the cinnamon sugar mixture on the cookies.
  14. Finally sprinkle the chopped almonds on top.
  15. Bake at 400F or, until light brown (about 6-8 minutes).
  16. Remove immediately from baking sheets. Transfer the cookies to wire racks for cooling.
