Tarteletter opskrift - An Easy Tarlet Pastry Base for Savory Tarts For Danish Easter Tarlets



Ingredients
  • 12 tbsp butter
  • 1 1/2 cup flour
  • 1/2 tsp salt
  • 1 egg, whipped
  • 2 tbsp ice cold water

Instructions
Mix the flour and butter, add salt, 1 whipped egg and 2 tbsp. cold water and knead it briefly.  Leave the dough  in the refrigerator for about 1 hour.

Butter and flour the backside of the muffinpan. Roll out the dough and cut it out in circles to fit the back of the muffinpan.  Prick the dough with a fork and bake at for approx. 20-25 min at 395F.

The tartlets can be kept in an airtight container for approx. 2 weeks or till you are going to use them.

Påske - Kylling og asparges i tarteletter - Chicken and White Asparagus Tarlet For Danish Easter



 Ingredients:
  • 1 jar of asparagus
  • 2 pieces of chicken breast
  • 1 leek, 1 celery stalk, a couple of carrots
  • bayleaf, parsley, thyme, salt, pepper
  • 1/3 cup cream
  • 2 tbsp. butter
  • 1/4 cup flour
  • Chicken stock
  • Tartlets
  • Parsley or chives

Instructions:
  1. Cover the chicken breasts with water, add the vegetables and bring to a boil. Cook for approx. 1/2 hour.
  2. Slice the cooked chicken  and the asparagus into small pieces.
  3. Melt the butter, add asparagus liquid and keep stirring. Add cream and chicken stock.  Finally add the chicken and asparagus pieces.
  4. Fill the tartlets with the creamed chicken and asparagus and sprinkle with either parsley or chives

Bøf Stroganoff - Beef Stroganoff - A Danish Recipe Version

 

 
Ingredients:
  • 1 lb fillet of beef
  • 2 tbsp paprika
  • flour
  • 1 large onion sliced
  • 1/2 lb mushroom, sliced
  • 2 tbsp. butter
  • 1 tbsp tomato paste
  • 1/2 cup beef broth 
  • a little garlic
  • 1/2 cup heavy cream or sour cream
  • salt and pepper

Instruction:
  1. Cut the meat into strips and dust it with paprika,
  2. Slice the onion and the mushrooms and fry them with the garlic in the butter until golden. Remove it from the pan.  
  3. Add a little butter or oil if necessary and brown the meat on high heat quickly on each side and keep stirring.  
  4. Add the tomato paste, onion, mushrooms, beef broth and heavy cream (or sour cream). 
  5. Season with salt and pepper.
  6. Serve hot with mashed potatoes and pickles on the side.
  7. You might replace the mashed potatoes with rice or noodles.

Kanelbullar - Swedish Cinnamon Roll Twists - Kanelsnurror

 
Swedish Cinnamon Roll Twists
 Ingredients

  • Approx. 7 cups of all purpose flour
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 3 1/2 tsp yeast
  • 2 cups lukewarm milk
  • 1 egg
  • 1 tsp cardamom
  • 10 tblsp melted butter
  • approx. 1/8 cup cinnamon and sugar
  • Egg wash and pearl sugar

Instruction:
  1. Mix the flour with milk, sugar, etc. and knead untill smooth. 
  2. Let it rise for about 1 - 1.5 hour. 
  3. Roll out the dough, spread it with butter and dust with sugar and cinnamon.
    If you don't have pearl sugar. you can sprinkle regular sugar too.
  4. Shape the buns.
  5. Brush them with egg wash and sprinkle with pearl sugar.
  6. Let the buns rise for approx. 45 min.  
  7. Bake them at 450F for approx. 13-15 min.
Enjoy the cinnamon twists warm.  Tastes great with butter.

Sunflower Spinach Pie - A Pretty Twisted Bread Recipe - Solsikke formet brød med spinat - Inspired by Disney Frozen Fever


Have you tried twisting bread before?  This is a delicious Sunflower Spinach Pie recipe that will have your family and friends begging for more! Plus this Sunflower bread is sooo pretty with the twisted bread!  Perfect to serve to your family and friends while watching the movie Frozen Fever.

Dough
  • 3 1/2 cup flour
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp yeast
  • 3/4 cup milk,
  • 1 tsp salt
  • 1 egg

 Filling
  • 12 oz. of boiled spinach
  • 12 oz. ricotta cheese
  • 4 oz grated parmesan or mozarella cheese
  • 1 egg
  • salt, pepper
  • optional: nutmeg
  • breadcrumbs
  • sesame seeds
Instructions
Place all dough ingredients in a bowl and use and electric mix,, finish by hand.Knead until the dough is smooth. Cover it and leave it for approx. 1 hour while you prepare the rest of the ingredients

Create the filling, mix the spinach with the ricotta and shredded cheese. Add the egg, salt, pepper (nutmeg), and set it aside.

Divide the dough into two equal parts and roll each dough ball to create two circles.

Sprinkle the breadcrumbs on the first circle and distribute the spinach filling. Place one large dollop in the center of the circle (cover it with a small bowl), and sprad the remaining spinach in a ring around the edge of the dough. finally place the last circle of dough on top of everything. Springle the sesame seeds on top of the center.

Divide the dough around the bowl into approx. 16 slices and twist each slice. Seal the edges using a fork to press.

Twist each slice and continue until all slices are twisted.

Seal the edges using a fork to press. Brush the bread with eggwash. Let it rise for approx. 1/2 hour and bake in the oven at 350F for approx. 1/2 hour.

This is a great to tear and share at your next party

Tastes great as is or with your favorite dipping sauce.

HVIDKÅLSSUPPE - Danish Cabbage Soup

Here is a traditional way to serve the Danish Cabbage Soup
This is our Danish version of Cabbage Soup! Healthy & Good! What to eat with Cabbage Soup? Traditionally, we serve cabbage soup with pork, a slice of rye bread and mustard. 
 Ingredients:
  • 2 lb of pork shank (or piece of beef)
  • 2 cups water
  • 5 whole peppercorns
  • 2 tbsp. salt
  • 1 onion (or top of leak)
  • 1 bunch of celery leaves
  • 1 bayleaf
  • 1 bunch of parsley
  • 1/2 head of white cabbage
  • 1 small celeriac
  • 1 large onion or 2-3 leeks sliced
  • 2-3 carrots
  • 3-4 potatoes

Instruction:
In a large pot place the meat covered with water and bring to a boil.  Remove foam from soup, add peppercorns, salt, onion, celery leaves, bayleaf, and parsley.  Let it cook on low heat, covered for about two hours.

Prepare the vegetable, slice the cabbage, peel and cut the celeriac in cubes, slice the onion (or leek), peel carrots and potatoes and cut them into cubes. Remove the soup from the heat and remove fat. Bring the soup to a boil and add the prepared vegetables. Let it cook for 15-20 min. or till everything is tender. Add salt and pepper according to taste.

Doesn't this soup look soooo good!


Remove the meat from the soup and serve it sliced on a separate plate with mustard and rye bread. Enjoy!
