Jødekager opskrift - A Classic Danish Holiday Cookie Recipe



These cookies Jødekager are very common in Danish bakeries and homes.  As a child our family always served these cookies at big family parties.  These are an old fashion cookie with great flavor.  It is almost impossible to just eat one cookie.  Below is the cookie recipe with a yummy cookie topping.  First step is make the cookie.

 


Cookie Ingredients:

  • 4 cups flour
  • 15 tblsp cold butter
  • 1 1/2 sugar
  • 2 egg yolks
  • lemon zest of 1/2 a lemon
  • 1/2 tsp of ground ginger

Cookie Topping:

  • 1 whipped egg
  • 1/3 cup of white sugar 
  • two teaspoons of ground cinnamon
  • chopped almonds
Kitchen Utensils:
  • bowl wooden spoon 
  • grater 
  • glass
  • pastry blender
  • measuring cup and spoons
  • rolling pin
  • baking sheet
  • parchment paper (optional)
  • whisk 
  • wooden spoon
  • food processor (optional)

Cookie Instruction:

  1. Grind lemon peel on a grater to get the lemon zest.
  2. Mix flour, sugar, lemon zest and ginger and crumble the mixture with the cold butter, so it has the consistency of grated Parmesan.  You can use either a pastry blender or your hands. (you may use a food processor too).
  3. Mix the egg yolks into dough mixture with a wooden spoon.  Then use your hands to continue combining the ingredients.
  4. Scrape the sides of the bowl as needed.
  5. Knead into a homogeneous dough without too much kneading.
  6. Shape the dough into a roll.
  7. Wrap the dough in plastic wrap and place it in the refrigerator for 2 hours or leave it in the freezer for approx. 1 hour.
  8. Roll dough out and cut out cookies with a glass or roll the dough into a sausage and slice it with a knife. 
  9. Place the cookies on a buttered and floured baking sheet.
  10. Beat an egg to make an egg wash. 
  11. Brush the cookies with the egg wash.
  12. In a small bowl mix sugar and cinnamon.
  13. Sprinkle the cinnamon sugar mixture on the cookies.
  14. Finally sprinkle the chopped almonds on top.
  15. Bake at 400F or, until light brown (about 6-8 minutes).
  16. Remove immediately from baking sheets. Transfer the cookies to wire racks for cooling.

Strawberry Mule Drink - Inspired from attending the Taste of Iceland in Boston

Icelandic vodka, strawberries and ginger typical Scandinavian ingredients and perfect to make a summer cocktail. My mother and I were introduced to the strawberry Mule while attending the Taste of Iceland in Boston. We knew that we would have to make this drink this drink as one of our summer time drinks going forward. 


 
Below are the ingredients to the Strawberry Mule drink. 


ngredients:
2 oz vodka
1 oz lime juice from 4 sweet limes
3-4 strawberries sliced
ginger ale

Directions:

In a glass, put the strawberries and lime juice in it. Muddle the strawberries with the lime juice. To muddle, you mixing and grinding the strawberries together to make a pulp.

Next add the ice to the glass, and add the vodka.

Ingredients:

  • 2 oz or 1/4 a cup of Icelandic vodka
  • 1 oz lime or 2 tablespoons juice from a half a lime
  • 3-4 red ripe strawberries sliced
  • 1 can of ginger beer
  • mint to garnish optional (optional)
  • 2 teaspoons of sugar (optional)
  • a wedge of lime to garnish(optional)
  • sliced strawberries to garnish (optional)
  • ice cubes
Kitchen Utensils:
  • cutting board
  • knife
  • mesh strainer
  • glass
  • bowl
  • measuring cup and spoon
Directions:


  1. Squeeze half a lime into a glass.
  2. In a bowl, slice up strawberries.  
  3. Pour lime juice into the bowl. 
  4. Take a fork and press the strawberries into the lime juice. Mix and press the strawberries and lime together to make a pulp.
  5. Place a mesh strainer over a bowl. Pour the strawbery lime juice into the mesh strainer. Stir the juice mixture around in the mesh strainer with your fork. 
  6. The result you should have enough strawberry lime juice for the drink in the bottom of a bowl.  Discard whatever is remaining in the mesh strainer. 
  7. Next add the ice to the glass.
  8. Pour 1/4 cup of vodka into the glass.  
  9. Next pour a can of ginger beer into the glass.  
  10. Add the strawberry lime juice
  11. If you would like to make the drink sweet, add two teaspoons of sugar or to taste (optional). 
  12. Garnish with sliced strawberries, a slice of lime or fresh mint.

Tomato, Cucumber, and Onion Salad Recipe - A Delicious Summer Salad!

Do you love tomatoes and cucumbers?  Here is another salad that is perfect for your weekend entertaining!

Below is the recipe to make an easy Tomato, Cucumber, and Onion Salad and a video.



Ingredients:
  • 1 large cucumbers (English cucumber or a standard cucumber), thinly sliced and cut in quarters
  • 4 roma tomatoes, sliced and cut in squares
  • 1/2 Vidalia onion, very thinly sliced
  • 1-2 tablespoon of chopped fresh parsley 
  • 1-2 tablespoon of chopped fresh chives
  • 1/2 cup of cider vinegar
  • 1/2 a cup of olive oil
  • 1/2 a cup of sugar (optional)
  • salt and freshly ground pepper
 
Kitchen Utensils
  • 1 large serving bowl
  • 1 small bowl
  • one measuring cup and measuring spoons
  • a vegetable shredder or a knife
  • cutting board 
  • Serving salad spoon and fork
Directions:
  1. In a large serving bowl, toss together the bite size chopped cucumbers, tomatoes, and onions
  2. In a small bowl add vinegar, olive oil, salt and pepper to taste. Stir the ingredients.
  3. Pour dressing over the salad. Mix everything together.  
  4. Let the salad stand for at least 20 minutes before serving. 
  5. Add chopped chives and parsley.
  6. You might want to double check to see if there needs to be a little more sugar, salt or pepper for taste.   
  7. Serve the cucumber salad as a side dish in a small bowl.
Tip: For a milder flavor, soak the chopped onions in salt water for 20 minutes before you mix it with the rest of the salad.

How to Make Kale Soup with Pork - Grønkålssuppe med Svinekød Opskrift

Grønkålssuppe med Svinekød
This is our Danish version of a Kale Soup! Healthy & Good! Kale Soup in the winter is great comfort food! What to eat with Kale Soup? Traditionally, we serve Kale soup with mustard and a slice of rye bread. 

Ingredients 
  • 2-3 lb. of Pork
  • 5 cups of water
  • 1 tsp salt
  • 1/4 tsp pepper (or peppercorns)
  • kale 
  • 2 bay leaves
  • 2 cloves
  • parsley
  • 2 celery stalks
  • 2 leeks
  • 4 carrots
  • 4 potatoes
  • 1 large onion
  • 3 tbsp of flour mixed with water
 Kitchen Utensils
  • cutting board
  • sharp knife
  • 2 large cooking pots
  • wooden spoon
  • ladel

Instructions:
  1. First need to boil the pork.  In a large saucepan cook the pork in 5 cups of water, add teaspoon of salt and 1/4 teaspoon pepper, 2 bay leaves, 2 cloves and parsley.
  2. Make sure the water boils.  When it is boiling need to take the foam off.
  3. Simmer the pork for about 1 ½ hours. Check on it after the hour to see how it is cooking
  4. While pork is cooking perfect time to prepare the kale and the vegetable including potatoes, leak, celery stalks, onion and carrots.
  5. In another pot cook the kale for about 10 min in about 2 cups of water.  
  6. Drain and chop the kale very fine or put it in a food processor. 
  7. For the last 10 minutes of cooking the pork add the chopped vegetables into the pot of soup. Cook until all vegetables are tender for about 10 minutes.
  8. Remove the pork to a platter and keep it warm. 
  9. To thicken the soup mix flour and water and stir it into the soup. Season with salt and pepper.
  10. Slice and serve the pork onto a plate with mustard and rye bread.   
  11. Ladle soup into bowls.

Strawberry Rhubarb Almond Muffin - A Yummy Summer Muffin Recipe


These muffins are simple, quick delicious and easy to make.  You can serve these muffins any time of the day warm or cold. Great for to have either for breakfast or as a snack.



Ingredients for Muffins:
  • 3/4 cup strawberries, diced bite size
  • 3/4 cup rhubarb, diced bite size
  • 3/4 cup of almond paste, diced bite size
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2-1/2 tsp. baking powder
  • 1/2 tsp. baking soda 
  • 1 teaspoon of cinnamon
  • 1/2 tsp. salt
  • 1 teaspoon grated orange zest
  • 1 cup sour cream 
  • 4 oz. (8 Tbs.) unsalted butter, melted and cooled slightly or at room temperature
  • 2 large eggs 
  • 1 tsp. pure vanilla extract 
  • cooking spray
Topping:
  • 3 Tbs. granulated sugar
  • 1/2 tsp. ground cinnamon 
  • 1/3 cup of sliced almonds 
Kitchen Utensils
  • large glass bowl 
  • 3 medium bowls 
  • measuring cup
  • measuring spoons
  • whisk or electric mixer
  • spatula 
  • ice cream scoop
  • knife
  • cutting board
  • 12-cup muffin pan

Instruction:
  1. First, preheat your oven to 400°F and position a rack in the center of the oven. 
  2. The second thing to do is line a 12-cup muffin pan with paper so nothing sticks.
  3. Next dice the rhubarb, strawberries and almond paste.  You want these about as small as a blueberry and no larger than a 1/4 of an inch.  If the fruit is not sliced up into small pieces, there is a chance that the fruit will sink to the bottom because the fruit is heavy. Set the everything aside in a bowl.
  4. In a large bowl mix the dry ingredients including flour, sugar, baking powder, cinnamon, baking soda and salt with a spoon.
  5. In a medium bowl, use a hand held whisk to whisk together quickly the sour cream, melted butter, eggs, orange zest and vanilla until smooth.
  6. Now  take 2-3 tablespoons of your flour mixture and put it into your strawberry, rhubarb and almond mixture.  Give the fruit and almond paste a quick little mix to coat them in the flour so the flour adheres to it.  That way when the muffins are baking, the fruit will not sink all of the way down. 
  7. Next, combine the dry ingredients right into the wet ingredients with a spatula.  Don't over mix.  The batter should have lumps and not be completely smooth.
  8. Now fold the fruit into the flour mixture with a spatula until the batter just comes together.  The spatula prevents from over mixing the flour and from smashing up the fruit so these are going to be a nice muffin.
  9. Next, add an ice cream scoopful of batter into each muffin cup and make them all of the same size. The batter should mound a bit higher than the tops of the cups.
  10. In a small bowl, combine the almonds, sugar and cinnamon and mix well. Sprinkle a generous 1/2 tsp. of the cinnamon almond sugar mixture over each muffin batter.
  11. Now we are ready to bake the muffins in preheated oven 400°F for about 20-25 minutes.  Bake the muffins until they’re golden brown.  The easiest way to tell if the muffins are baked is to insert a toothpick into the center.  If the toothpick comes out clean then you know they are done.
  12. Transfer to a wire rack and let the muffins cool in the pan for 5 to 10 minutes.
  13. These muffins are best when freshly baked, but they’re still good the second day.
