How to Make Swedish Dill Potatoe Salad Recipe 🍴 Dillstuvad Potatis


Did you know that the first potatoes in Sweden was around 1655? Potatoes were documented at   Olof Rudbeck’s botanical garden in Uppsala, Sweden.

Recently, I went to a Midsummer celebration.  We danced around the Maypole (majstång  or  midsommarstång) and had traditional dishes such as 4 kinds of herring!! Which made me so happy to have 4 kinds of herring.  I just love herring!   🎈 🎉


It made me think to make the Swedish Dill Potatoe salad side dish.  It is perfect timing as I have so much dill, parsley and chives in my garden right now.  😀  This dish  goes with any summer dish such as grilled chicken, fish and even hotdogs.


Below is my recipe to mkae the Swedish Dill Potatoe Salad

🌼 Ingredients

  • 1 pound freshly boiled potatoes, cut into inch wide pieces
  • 1/2 tablespoon freshly ground white pepper
  • 3 heaping tablespoons chopped dill, parsley and/or chives

Béchamel sauce:

  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter
  • 1 1/3 cups whole milk or half milk/half cream
  • salt & pepper to taste

Instructions:

  1. Melt 1 tablespoon of butter in a saucepan over medium heat
  2. Add the flour & combine.
  3. Add cream or milk and whisk together.
  4. Bring to boil and let it boil for 2-3 minutes until the sauce thickens.
  5. Cut potatoes into inch wide pieces.
  6. Add salt and pepper to taste.
  7. Add the pre-cooked potatoes and heat through.
  8. Add half of the herbs.
Serve with either grilled chicken, steak or fish.  In Denmark, we typically have potatoe salad with hotdogs which is what I had with this recipe recently. 🍽️

How to Make Strawberry Rhubarb Salad 🍓


Rhubarb has been an important ingredient in Denmark since the 1800's. Summer memories including gardens with rhubab growing in Danish garden's such as my Mormor's garden. As well, rhubarb recipes such as rabarbergrød.

Here is modern rhubarb recipe that I had in Bakken a couple summers ago.  One of the restaurants had a salad buffet with a rhubarb salad.  So simple and delicious.  I had never tried a rhubarb salad before.  This had a nice sweet citrus flavor. The rhubarb becomes softened slightly while soaking in the citrus juices. I have had this recipe on my mind since being a Bakken. Here I added sliced strawberries and mint to this salad recipe which compliments rhubarb very well too.

How to Make Strawberry Rhubarb Salad 🍓

☀Ingredients ☀
4 cups of thinly sliced rhubarb
1/2 a cup of orange juice
1/2 a cup of lemon juice 🍋
3/4 cup of sugar
Clean & slice 2 cups of strawberries. 🍓
Slice or tear fresh 3 or 4 mint leaves 
Toasted sliced almonds

Instructions:
-slice 4 cups of thinly sliced rhubarb

-Mix rhubarb, orange juice, lemon juice and sugar in a bowl.
-Let rhubarb mixture sit until slightly softened and releases its juices, about 30 minutes.
-Preheat oven to 350°. Toast sliced almonds until golden brown, 8–10 minutes. Let cool.
-Clean & slice 2 cups of strawberries.


-After 30 minutes mix in sliced strawberries and torn mint leaves and sprinkle toasted almonds over salad.
-Mix the strawberry rhubarb mixture in the bowl. 🥄

Serve the same day.  The salad will become too soft if served the next day.

Kale Salad Recipe for the - Grønkålssalat med mandler, rosiner og æbler

We love salads, vegetables and fruit. Kale is one of our all time favorite leafy greens. This combination makes a delicious Summer Salad.  This kale salad is so easy and healthy to make. Sometimes I will go buy a big bag of kale for a Sunday brunch.  Any leftover salad I will have with our dinner the next day. So let's get started.

Salad Ingredients:
  • 1/4 lb Kale (approx.) 
  • 2 Apples 
  • 1/2 cup of raisins 
  • 1/2 cup almonds 
  • Optional: shredded cheese as topping 
Dressing Ingredients:
  • 1 tblsp white wine vinegar 
  • 1 tblsp honey 
  • juice of 1 orange

Instruction:
  1. Mix the dressing in the bowl. 
  2. Roll up the kale leaves and slice and massage them, and add them to the dressing. Kale is a little more difficult to chew than the average green. The acid in the vinegar and slicing it thinly makes it easier to chew. 
  3. Chop the apples and the almonds and add them as well as the raisins to the chopped kale. 
  4. Also, to soften the leaves, leave the kale in the dressing for approx. 5-10 min. before you eat it. 
  5. Enjoy!
 
Strawberries and orange slices or any other fruit you have available will also taste great in this recipe. With so many options to mix and match to your taste, you can't go wrong. 

In Denmark, I grew up eating a lot of Kale.  My family has always grown Kale in our yard and made many meals eating kale dishes.  Our kale salad or in Danish (Grønkålssalat med mandler, rosiner og æbler) is a modern dish that I am sure my parents would have enjoyed.  We hope you enjoy it too. Tomato, Cucumber, and Onion Salad Recipe - A Delicious Summer Salad!

Do you love tomatoes and cucumbers?  Here is another salad that is perfect for your weekend entertaining!

Below is the recipe to make an easy Tomato, Cucumber, and Onion Salad and a video.



Ingredients:
  • 1 large cucumbers (English cucumber or a standard cucumber), thinly sliced and cut in quarters
  • 4 roma tomatoes, sliced and cut in squares
  • 1/2 Vidalia onion, very thinly sliced
  • 1-2 tablespoon of chopped fresh parsley 
  • 1-2 tablespoon of chopped fresh chives
  • 1/2 cup of cider vinegar
  • 1/2 a cup of olive oil
  • 1/2 a cup of sugar (optional)
  • salt and freshly ground pepper
 
Kitchen Utensils
  • 1 large serving bowl
  • 1 small bowl
  • one measuring cup and measuring spoons
  • a vegetable shredder or a knife
  • cutting board 
  • Serving salad spoon and fork
Directions:
  1. In a large serving bowl, toss together the bite size chopped cucumbers, tomatoes, and onions
  2. In a small bowl add vinegar, olive oil, salt and pepper to taste. Stir the ingredients.
  3. Pour dressing over the salad. Mix everything together.  
  4. Let the salad stand for at least 20 minutes before serving. 
  5. Add chopped chives and parsley.
  6. You might want to double check to see if there needs to be a little more sugar, salt or pepper for taste.   
  7. Serve the cucumber salad as a side dish in a small bowl.
Tip: For a milder flavor, soak the chopped onions in salt water for 20 minutes before you mix it with the rest of the salad.

Strawberry Spinach Salad with Pecans



Do you love fruit in your salad? We sure do!  Here is are a recipe for a delicious strawberry spinach salad with pecans. 


 Salad Ingredients 

  • 6 oz fresh spinach rinsed, dried and torn into bite-size pieces
  • 1/2 lb strawberries, cleaned and sliced
  • 1/2 cup chopped pecans
  • 1 tblsp minced onions
  • 1/4 cup shredded cheese 

 Dressing Ingredients

  • 1/4 cup sugar
  • 1/4 cup olive oil
  • 1/8 cup balsamic vinegar
  • 1 tblsp poppy seeds
  • 1 tsp mustard
  • dash paprika, salt, pepper
  • 2 tblsp chopped basil leaves, approx.

Instruction:

  1. In a medium bowl, whisk together the poppy seeds, sugar, olive oil, balsamic vinegar, paprika, mustard, basil leaves and chopped onion, salt and pepper.
  2. Cover and chill.
  3. In a large bowl, combine the spinach and strawberries.
  4. Pour dressing over salad and toss.
  5. Add the chopped pecans and shredded cheese.
  6. Refrigerate 10 to 15 minutes before serving.

Swedish Red Beet Herring Salad - Sillsallad

The Swedish Herring Salad is a salad we should make more often.  As you can see the video how much Karen Grete just loved eating it.  We hope you enjoy this as much as we do!




Approx. 4 Servings


  • 2 1/2 oz salt herring or Matjes herring fillets in wine-flavored sauce
  • 1/2 cup diced boiled potatoes
  • 1/2 cup diced pickled beets
  • 1 tblsp diced dill pickles
  • 1 tblsp finely chopped onion
  • 2 tblsp liquid from pickled beets
  • 1/2 tsp sugar
  • Dash of pepper
  • 1/2 cup yogurt (optional mayonnaise or whipped cream)
  • 1 tsp mustard
  • 2 hard-boiled eggs
  • 1 tblsp diced apple (optional)
  • Parsley for garnish (optional)
Kitchen Utensils
  • 1 bowl
  • one measuring cup and measuring spoons
  • a knife
  • cutting board 
  • large bowl
  • spoon
Directions: 

  1. Mince herring fillets fine. 
  2. Finely mince all the other diced ingredients, so the flavors will blend well and mix them gently together. 
  3. To prepare the dressing combine yogurt, beet juice, mustard, pickle, sugar and pepper and blend well in large bowl. 
  4. Next, gently stir in the chopped beets, onions and potatoes.  
  5. Then, stir in the minced herring. 
  6. If need be, adjust with beet juice, beets or another ingredient
  7. Chill before serving in the large bowl for aprox. an hour. 
  8. Garnish with hard-boiled eggs and chopped parsley. Serve with a side of rye bread
Another serving option
  1. For a pretty look pack the red beet herring salad into a mold or bowl which has been rinsed with cold water and greased lightly with oil. 
  2. Then, chill before serving. 
  3. Unmold onto a serving platter and garnish with hard-boiled eggs and chopped parsley. Serve with a side of rye bread.

How to make Swedish Cucumber Salad - Svensk gurksallad - Sourcream Cucumber Salad with Dill Recipe

A Swedish side dish recipe for dinners, lunches & leftovers. We hope you enjoy the Swedish sour cream cucumber salad with dill recipe! It is so nice and creamy. We enjoy having this Swedish cucumber salad in the summer time. 

Below is the recipe to make the easy Swedish cucumber salad and a video.





Ingredients 

  • one English cucumber or a standard cucumber works too
  • 1 cup regular or reduced-fat sour cream 
  • 1/4 cup of fresh lemon juice 
  • 1 tablespoon of sugar
  • 2 tablespoons chopped fresh dill, plus more for garnish (optional) 
  • 1 small finely chopped onion
  • a sprinkle of salt and pepper
  • 2 tablespoons of salt
Kitchen Utensils
  • 1 bowl
  • one measuring cup
  • a vegetable shredder or a knife
  • cutting board 
  • plate 
  • heavy bowl or container
  • 2 medium-large bowls
Directions:
  1. Slice cucumber into thin slices and put it into a medium-large bowl. (The English cucumber is our preference because the seeds are so small.) 
  2. Then, sprinkle 2 tablespoons of salt over thinly sliced cucumbers.  Place a plate over the cucumbers and sit something heavy over the plate.  (This should help squeeze the cucumber juices.) Wait about 1 an hour.  Then, with your hands squeeze the liquid out of the cucumbers.  Pour the cucumber juice out of the bowl.
  3. In the medium-large bowl, combine sour cream, lemon juice, sugar, onion and dill. Season with salt and pepper, and whisk well to combine.
  4. Add cucumbers, and toss to coat the cucumbers
  5. Garnish with more dill, if desired.
  6. You might want to double check to see if there needs to be a little more sugar, salt or pepper for taste.  
  7. Serve the cucumber salad as a side dish in a small bowl.

Danish Warm Potato Salad Recipe - Dansk warm kartoffel salat

Easy to make and ready in no time.  This Danish warm potato salad adapts well if you have a small family dinner or a large family get together such as picnics, football season or holidays.  It is a perfect side dish. 

I make this Danish warm potato salad during the fall and winter season. This delicious side dish is like comfort food.  My mother made this side dish when I was growing up.  Danish Frikadeller always goes great with this on a cold fall day.  

However, this is always a winner during summer meals too.  If we do some outdoor grilling, I enjoy having the warm potato salad with a hotdog.

Below is a recipe to make homemade Danish Warm Potato Salad Recipe - Dansk warm kartoffel salat.  Great to have any time of the year!

Ingredients
  • 6 medium potatoes 
  • 4 tbsp butter 
  • 2 tbsp water 
  • 2 tbsp sugar
  • 1 large onion thinly sliced
  • 1/3 - 1/2 cup white wine vinegar 
  • salt and pepper to taste
  • 1 cup of warm cream
 Kitchen Utensils
  • cutting board
  • sharp knife
  • small-medium heavy saucepan
  • wooden spoon

Instructions  
Boil the potatoes, peal them, cool them and cut them into slices. 

Now we are ready to make the sauce in a medium size pot.  First, we need to melt the butter and two tablespoons of water.   

Next add the onions, sugar, vinegar, salt and pepper.  Stir the sauce mixture with a wooden spoon. Let this cook for about 5 to 10 minutes or until the onions are transparent.
  
Once the onions are clear, we are ready to add warm cream into the pot.

Finally, add the potato slices into the onion sauce mixture and heat them up. Stir gently, being careful not to break the potatoes. 

Season to taste.  Cover to keep warm until you are ready to serve. 

Many times I like to go into my garden and grab some chives for the Danish warm potato salad.  I chop up a bunch of chives and add it on top of the warm potato salad. It gives it a nice color too.

Another typical Danish topping are capers.  If you have never had capers on your warm potato salad, it will give your next meal a new twist. 

There are many meat options to have with the warm potato salad. We usually have it with either fried bacon, ham, hotdogs or frikadeller.  These choices are classic to have in Denmark too.

Of course you can add a side salad on the side too.  However, I love having sliced red beets. If you have seen alot of my YouTube videos, you might have noticed that I eat sliced red beets with many of the meals I eat.  Well, sliced red beets is very typical Danish too.
