The Danish Constitution Day is on June 5th this year. So we thought it would be
fun to make a two layer Danish Flag Cake with custard, raspberries and plenty of whipped cream in celebration. Dannebrog is the name of the Danish flag
and it is the oldest in the world.
Ingredients
1 1/3 cup flour
1 cup sugar
1/4 cup milk
6 oz or 1 1/2 stick butter
4 eggs - seperated, egg whites beaten stiff
1 tsp vanilla extract
1 tsp baking powder
custard
raspberries
whipped cream
frosting
Beat
butter and sugar, add 4 egg yolks. Add milk w/vanilla extract. Add flour
mixed with baking powder. Beat 4 egg whites stiff and add it to the
mixture. Bake in pan greased with butter and flour at 425F for approx.
15 min.
Cut cake in half, add custard between the two layers.
Add frosting to top layer and place raspberries to form flag with whipped
cream forming a cross.
This Danish Almond Cake ( also know as Frangipan or in Danish Mandel Kage) is soooo easy to make and very few ingredients. Every person I serve this cake loves it!
Serve the cake with fresh fruit, whipped cream or even ice cream. The almond cake will go fast!
Mix almond pase, sugar and butter at low speed in mixer for approx. 2 min.
Add the egges, one at the time, and beat it at high speed for appros. 2-3 min.
Add flour and fold it into the batter without stirring.
Add the batter to the buttered and floured baking pan and bake at 350F for approx. 30 min.
Remove from the baking pan and let it cool.
Below is a fun way to decorate the cake with strawberries.

In Denmark, we eat a lot of Rye bread. I had it everyday growing up in Stege for either breakfast, lunch, or dinner. Just like Rye bread the Nordic Nut Bread (sometimes called Stone Age Bread or Paleo Bread ) is very filling compared to white bread. If you like rye bread then you will enjoy this Nordic Nut Bread for sure. Plus it healthy!
Making Nordic Nut Bread is very easy to make. What is interesting about the Nordic Nut Bread is that it does not include any flour or yeast. So you won't have to wait for the dough to rise. If you have extra seeds to set aside for baking then you can prepare some of the ingredients in advance. The preparation time is about 15 minutes.
♥ Ingredients ♥
3 1/2 oz (100 g) walnuts, chopped
3 1/2 oz (100 g) almonds, chopped
3 1/2 oz (100 g) flax seeds
3 1/2 oz (100 g) poppy seeds
3 1/2 oz (100 g) sunflower seeds
3 1/2 oz (100 g) sesame seeds
3 1/2 oz (100 g) pumpkin seeds
1 1/2 tsp salt
1/4 (1 dl) cup extra virgin olive oil
5 eggs
Directions:
Chop the bigger nuts (almonds and walnuts) before you mix them with the rest of the nuts.
Mix the nuts and seeds with salt, oil and 5 eggs.
Line baking form with baking paper. Spray the form with oil or butter it.
Place the dough into the baking form.
Bake it at 350F for approx. 1 hour.
Let it cool before you slice it.
Serve plain or with butter, cheese or cream cheese.
The only thing is nuts can be expensive and there are a lot of nuts to gather to make this bread! Because this bread includes a variety of seeds, you can get creative and try various other seeds that are not listed below. This is great if you are allergic to certain seeds. We were thinking peanuts or pine nuts might be fun to substitute in the future. Enjoy!

Butter
the inside of the baking pan and layer sliced potatoes with chopped
onions and cheese in the pan. Mix garlic in cream with salt, pepper,
nutmeg and chives. Pour it over the potato mixture and sprinkle with
cheese.
Cover the pan with foil and bake in the oven at
375F for approx. 45 min. Remove it from the oven and sprinkle with
cheese before you return it to the oven for approx. 15 min at 400F.

My hometown, Stege, on the island, Møn in Denmark, was established around 1100 because of all the herring they were catching in the ocean surrounding the island.
When we had parties, and we were serving the Danish open-faced sandwiches, it was a tradition to always start with a herring sandwich. The first bite of the herring was usually followed by a small glass of snaps, and we would, of course, say "skål".
Mild Spiced Herring
1 jar of herring (salt herring or herring in wine sauce)
1/4 stick of cinnamon
1 star anise
2 cloves
1 tsp cumin
1/2 -1 tsp pepper
1 tsp cardamom
1 bayleaf
(you may want to increase spices according to your taste)
Rinse the herring under the faucet. Next, cook all the spices in approx. 1 cup of water for approx. 5 min., and let it cool down before you pour it over the herring pieces.
Leave the herring in the spices for approx. 2 days before you eat it. Leave the herring in the refrigerator, and I sugest you eat the herring within one week.
Herring Sandwich
Butter a slice of ryebread and place a hardcooked sliced egg on the bread. Add the herring as well as the capers, chives, and sliced onion.
The Danish toasted oatmeal is very traditional and served on top of either the Danish koldskaal or on yogurt.
♥ Ingredients ♥
2 cups Oatmeal
7 tbsp butter
1/2 cup sugar
aprox. 1/2 cup chopped almonds (or any kind of nut)
Optional: fresh fruit, raisins, cranberries or other dried fruit.
♥ Instruction ♥
Melt the butter in the frying pan, add the sugar, and finally add the oatmeal. Keep stirring till the oatmeal is lightly brown and crisp, then add the almonds (or any kind of nut). Make sure it does not get burnt.
When the toasted oatmeal is cold keep it in a jar with a lid or in a plastic bag.
Serve the oatmeal on top of either the Danish "koldskaal" or yogurt. Check out our video to make Koldskaal too
Growing up on Møn we were spoiled with so many things. We enjoyed the summers going to the sandy beaches, swimming in the ocean and having fresh fish for lunch. Our fish fillet recipe is just like the way my
mom made it when growing up on Møn.
This fried fish fillet recipe is so easy,
fast and very versatile. The fish fillet turns
out very crispy, which is the way I like. We enjoy the fish fillet with our
favorite vegetables for dinner. Then the next day, we serve an open faced sandwich
with the fish for lunch.

Ingredients:
2 pieces of fresh fish fillets
(halibut, tilapia, cod or other white fish fillet)
1 egg, whipped
1/2 cup milk
1/2 cup flour
1/2 cup bread crumbs
oil and butter for frying
salt and pepper
lemon slices
Instruction:
Add salt to flour and breadcrumbs as well as pepper
according to taste.
Dip the fish fillets in milk, flour, whipped egg and finally
in the breadcrumbs.
Add oil and butter to the frying pan.
Add the fish fillets and fry them at medium heat. Fry the fillets for approx. 2-3 minutes on each
side (according to the thickness of the fillets) and till golden brown.
Serve the fillets with remoulade sauce, lemon slices and capers.

Add your choice of vegetables
and/or bread. We like to have summer potatoes
and fresh asparagus. Season to taste with salt and pepper

A very traditional Danish dinner dish! Millionbøf is easy to make for small meals or for a family get together. Most adults as well as children like it. My family usually eat every drop of this dish and usually ask for seconds.
Below we prepare millionbøf with mashed potatoes and a side of spinach and red beets. However, try millionbøf with either mashed potatoes or even spaghetti. Both taste great with millionbøf.
Ingredients:
1 large or 2 medium onions
1 lb of ground beef
3 tblsp flour
oil for frying
1-2 cups of water
3 tblsp flour
1 bouillon cube
2-3 bayleafs
2 tsp salt (to taste)
1 tsp pepper
1 tblsp tomato pure, optional

Instruction: Chop the onions coarsely and fry them in oil. When they begin to brown add the ground beef and brown it well. It is important to brown the onions and meat well. Add the bouillon cube, salt, pepper and bayleaves. Mix the flour with the water and add it to the meat. Keep stirring and make sure there are no lumps. (optional add tomato pure) Let the dish simmer for approx. ½ hour. Serve the million beef with boiled or mashed potatoes, red beets and your choice of vegetable. Mashed Potatoes: Boil the potatoes until tender in water without salt. Drain off the water and place the pot on the stove until the potatoes are steamed dry. Mash the potatoes and stir in the milk, so you get soft mashed potatoes. Add butter, salt and pepper according to taste.
Here we have spinach as a side dish but you can have any side vegetable such as peas. Also we are serving red beets with our millionbøf dinner. Red beets is very typical to have for either a Danish lunch or dinner and it tastes great with millionbøf.
Here we serve Million Beef with Mashed Potatoes on a Royal Copenhagen plate. The pattern we selected for this dish was the Blue Flower Curve.

The Danish holiday (Store Bededag Great
Prayer Day) celebrated on the 4th Friday after Easter. In the year 1686 the Danish King Christian decided to collect certain holidays into one big day
called Store Bededag. This way the Danes had more days to work.
It was the tradition to buy "varme hveder" the
evening before Store Bededag, because the bakeries were closed on holidays, and
people bought the bread for the following day
Today we still have the tradition of eating "varme
hveder", Thursday evening before the actual holiday, Friday.

Varme Hveder - Warm Wheat Buns Ingredients:
2½ dl flour
6 oz milk
1 egg
1 1/4 tsp yeast
1/4 tsp salt
2 tsp sugar
1/2-1 tsp cardamom (according to taste)
4 tbs butter
Instruction:
Mix the warm milk with 1 1/2
tsp yeast, 1 tsp sugar.
Mix the flour with 1/2-1 tsp
cardamom, 1 tsp sugar and 1/4 tsp salt.
Add the egg and the melted
butter to the milk and pour it all into the flour.
Knead the dough for about 10
min, cover it with a towel, and let the dough rise for about 1 1/2 -2
hour.
Roll the dough and cut it
into 8 buns. Leave the buns in a pan sprayed with oil and dusted with
flour. Cover it up and let the rise for 1-2 hours.
Bake the buns in the oven at
400F for about 20- 25 minutes. Let them cool a little and cut them in two
pieces.
Place the cut buns in the
oven for about 5-6 min on a baking sheet at 400F.
Serve the buns hot (or cold)
with butter and jam or cheese with coffee or tea.Enjoy!

Hakkekarbonader with potatoes, peas and carrot sauce with a sprinkle of parsley is a classic Danish dinner. My mother made this when I was a child. I have made this for my family as well. Enjoy!
Ingredients
1 lb pork or 1/2 lb pork and 1/2 pork veal
flour
1 egg whipped with 1 tbls. water
breadcrumbs
salt, pepper
butter and oil for frying
Preparation:
Form the pork into four pork patties and shape them with a knife.
Turn the patties in the flour, then the whipped egg, and finally the breadcrumbs.
Sprinkle with salt and pepper.
Fry pork patties in 1/2 butter 1/2 oil in the frying pan for approx. 5 minutes on each side at medium heat.
Cover the potatoes with water in a pot, add a pinch of salt, and boil till soft (approx. 20 min. after water is boiling).
Serve with stewed peas and carrots.
Serve with boiled potatoes and peas and carrot stew.

Tillykke med fødselsdagen Hans Christian Andersen!! Hans Christian Andersen's birthday was on April 2nd. So we thought it would be fun to make his favorite raspberry bars in celebration of his birthday!
Ingredients:
2 1/2 cups all-purpose flour (or 2 1/4 cup flour and 1/4 cup almond flour)
1 cups confectioner's sugar
1 tsp. vanilla extract
8 tbsp butter, diced into small cubes
1 egg, beaten
1 1/2 cup confectioner's sugar for glaze
2-3 tbsp water
1 cup raspberry jam or preserves
decorating sprinkles / nonpareils

Instruction:
Whisk
together flour, 1 1/4 cups confectioner's sugar.
Using a pastry
blender or two knives, cut the butter into the flour mixture until it
resembles small crumbs (it will be the texture of basic pie crust
dough).
Mix in beaten egg to form a soft dough and add the vanilla
extract.
Divide dough into two halves, cover each with plastic wrap, and
refrigerate for one hour.
Preheat
oven to 375º. Using a rolling pin roll out each half of the chilled
dough into an 10" x 10" square.
Trim the edges to make them square, then
carefully roll the dough around your pin and transfer to parchment
paper-lined baking sheets.
Bake for 12-14 minutes or until golden brown.
Remove from oven and allow to cool.
Spread
raspberry jam on bottom layer and cover with top layer.
Combine 1 cup
confectioner's sugar with 2 Tbsp. water to form a thick glaze. Spread on
top layer of cookie and sprinkle with nonpareils.
Once the glaze has
"set" (about 10 minutes), cut into bars.
