Smørrebrød Danish Roast Pork with Red Cabbage & Crackling Open Face Sandwich

If you make a pork roast with red cabbage, you probably have all the toppings (pålæg) for a great smørrebrød table the next day. Making a classic roast pork open sandwich is always a sure-fire crowd pleaser too. It was and still is a completely delicious treat!


Below are a few ingredients to make an absolutely delicious sandwich. 

Ingredients:
  • 1 piece of rye bread
  • European style butter
  • 2 slices of roast pork
  • 3 or 4 pieces of pork crisp/ crackling
  • 1 to 2 tablespoons of red cabbage
  • 3 or 4 dill pickle 
  • 3 or 4 prunes
Instructions:
  1. When you are ready to make this smørrebrød, the first thing to do is butter a piece of dark Danish rye bread.
  2. Lay across the rye bread either 2 slices of pork roast. Depending on the size of the pork roast.
  3. Then, add a nice large spoonful of red cabbage on top of the pork roast. This adds a delicious flavor to this sandwich. 
  4. Add 3 or 4 slice of pickle fanned out on side. 
  5. Finally add 3 or 4 prunes on the side 
  6. Lay over the red cabbage 3 or 4 slices of pork crisp/ crackling

It's that easy! This sandwich goes great with enjoy with lager beer too.  We usually set the table with a Royal Copenhagen plate, a fork, a knife and a glass for the beer.

Smørrebrød Smoked White Fish Sandwich with Caviar and Raw Egg Yolk

Here is an example of a tall sandwich as the colorful layers of the toppings are stacked.  This delicious smoked white fish open faced sandwich is great for either lunch or dinner.


Below are a few ingredients to make an absolutely delicious white fish sandwich. 

 Ingredients:
  • 1 slice of white bread (Italian or French)
  • butter (European-style butter is easier to spread)
  • 1 raw egg yolk held inside 1/2 an egg shell
  • 1 wedge of lemon
  • 4-6 pieces of smoked white fish (smoked herring or mackerel are great options too)
  • 1 to 2 teaspoons of black caviar
  • fresh radish as garnish 
  • chopped dill for taste & decoration 
Instruction:
  1. Before adding a topping, spread butter onto either a slice of French or Italian bread.  This protects the bread from moisture.
  2. Generously lay across the white bread either 4-6 pieces of smoked white fish (depending on size(. You want to cover the bread with the smoked white fish.
  3. Add on top of the smoked white fish 1 to 2 spoonfuls of black caviar.
  4. Next, carefully tip an half egg shell onto an angle so that the white begins to separate itself.  Remove as much of the white as you can while keeping the yolk intact in the shell.  Place the egg shell with the yolk inside in the middle of the black capers so that it settles just enough to stay upright
  5. Garnish with dill on the side of the eggshell
  6. On the side add a wedge of lemon and fresh radishes.
It's that easy! This sandwich goes great with a Danish beer too.  We usually set the table with a Royal Copenhagen plate, a fork, a knife and a glass for the beer.

Smørrebrød Danish potato anchovy open faced sandwich. Inspired by dish called Jansson's Temptation

Recently, we made the Jansson's Temptation dish and we were inspired to make a potato anchovy open faced sandwich.  This delicious potato anchovy open faced sandwich is great for either lunch or dinner. 


The open sandwich recipe below is a tall sandwich because of the layers of colorful toppings.  To give the sandwich a little extra color and a yummy twist  we garnished with some fresh radishes too

 

Below are a few ingredients to make an absolutely delicious anchovy sandwich. 

 Ingredients:
  • 1 piece of rye bread
  • European style butter
  • 2 tablespoons of sour cream
  • chopped chives
  • 6 pieces of anchovies
  • 4-6 slices of cold potatoes (depending on the size)
  • 1 to 2 teaspoons of caviar
  • fresh radish as garnish 
  • chopped parsley or dill for taste & decoration 
Instruction:
  1. When you are ready to make this smørrebrød, the first thing to do is butter a piece of dark Danish rye bread.
  2. Lay across the rye bread either 4-6 slices of cold potatoes.
  3. Then, mix in a small bowl a nice large spoonful of sour cream with chopped chives.This topping goes great with the anchovies.
  4. Next add on top of the potatoes a large spoonful of the sour cream chive topping. 
  5. Lay 5 or 6 pieces of anchovies across the sour cream. 
  6. Sprinkle capers across the center of the sandwich
  7. Finally for garnish add parsley and fresh radishes on the side.  
It's that easy! This sandwich goes great with a Danish beer too.  We usually set the table with a Royal Copenhagen plate, a fork, a knife and a glass for the beer.

Swedish Red Beet Herring Salad - Sillsallad

The Swedish Herring Salad is a salad we should make more often.  As you can see the video how much Karen Grete just loved eating it.  We hope you enjoy this as much as we do!




Approx. 4 Servings


  • 2 1/2 oz salt herring or Matjes herring fillets in wine-flavored sauce
  • 1/2 cup diced boiled potatoes
  • 1/2 cup diced pickled beets
  • 1 tblsp diced dill pickles
  • 1 tblsp finely chopped onion
  • 2 tblsp liquid from pickled beets
  • 1/2 tsp sugar
  • Dash of pepper
  • 1/2 cup yogurt (optional mayonnaise or whipped cream)
  • 1 tsp mustard
  • 2 hard-boiled eggs
  • 1 tblsp diced apple (optional)
  • Parsley for garnish (optional)
Kitchen Utensils
  • 1 bowl
  • one measuring cup and measuring spoons
  • a knife
  • cutting board 
  • large bowl
  • spoon
Directions: 

  1. Mince herring fillets fine. 
  2. Finely mince all the other diced ingredients, so the flavors will blend well and mix them gently together. 
  3. To prepare the dressing combine yogurt, beet juice, mustard, pickle, sugar and pepper and blend well in large bowl. 
  4. Next, gently stir in the chopped beets, onions and potatoes.  
  5. Then, stir in the minced herring. 
  6. If need be, adjust with beet juice, beets or another ingredient
  7. Chill before serving in the large bowl for aprox. an hour. 
  8. Garnish with hard-boiled eggs and chopped parsley. Serve with a side of rye bread
Another serving option
  1. For a pretty look pack the red beet herring salad into a mold or bowl which has been rinsed with cold water and greased lightly with oil. 
  2. Then, chill before serving. 
  3. Unmold onto a serving platter and garnish with hard-boiled eggs and chopped parsley. Serve with a side of rye bread.

SMØRBRØD Norwegian Smoked Salmon, Shrimp & Caviar Open-Faced Sandwich - Røkt Laks, Reker og Kaviar

This delicious Norwegian Smoked Salmon (røkt laks) sandwich is great for either lunch or dinner. We added to this delicious sandwich an extra seafood (skaldyr) twist by adding shrimp (reker) and caviar (Kaviar) which makes it a delicious feast for the seafood lovers! To give the Norwegian salmon sandwich a little extra color and a yummy twist either dill or parsley can be used to garnish too. 

The open sandwich recipe below is a tall sandwich because of the layers of colorful toppings. The recipe is easy to create your own tall open sandwich.

  Ingredients:
  • 1 slice of white bread (Italian or French)
  • butter (European-style butter is easier to spread)
  • 2 tablespoons of cream cheese 
  • 2 pieces of smoked salmon
  • 3 or 4 pieces of shrimp
  • 1 to 2 teaspoons of caviar
  • 1 large pieces Boston or Romaine lettuce leaves
  • chopped parsley or dill for taste & decoration 
  • 1 lemon wedge slice for garnish
Instruction:

Smoked Salmon Rolls:
  1. First spread cream cheese across two slices of smoked salmon.  
  2. Sprinkle chopped dill across the cream cheese.  
  3. Roll the cream cheese up into a roll.  
  4. Place the smoked salmon rolls onto a plate and put it in the refrigerator.  
  5. After an hour, take the plate out of the refrigerator.  Slice the rolls into 1/4 inch slices.  (See our video)

Open Sandwich:
  1. Before adding a topping, spread butter onto either a slice of French or Italian bread.  This protects the bread from moisture.
  2. Place a piece of either Boston or Romaine lettuce leaves on the bread. 
  3. Then, place 3 or pieces of shrimp one end of the white bread
  4. Next place 4 slices of the Norwegian smoked salmon rolls next to the shrimp on the bread. 
  5. Add one or two teaspoons of caviar over the shrimp 
  6. Garnish with a wedge of lemon and dill

Serve on plate with silverware.  It is a great sandwich for either lunch or dinner.
